ampania buffalo mozzarella is a dairy product traditionally produced in Campania, especially in the provinces of Naples, Caserta and Salerno. The production of this typical cheese also takes place in other parts of Campania as well as in southern Lazio, in Apulia and in the municipality of Molise in Venafro. The term mozzarella derives from the name of the cutting operation performed to separate the dough into individual pieces. It is often called queen of Mediterranean cuisine, but also white gold or table pearl, out of respect for the gastronomic and gustatory qualities of the product. Each year in Italy, around 45 tonnes of Campania buffalo mozzarella are produced and 14 are exported.
